Folded Zucchini Bites. I bet you never had Zucchini like this!

I must admit I started preparing this dish with no plan whatsoever. I had to make some adjustments here and there to save it (I actually wanted to do it with eggplant but unfortunately it had already gone bad.) The result was pretty good though - and even more satisfying than I expected ;)

So here we go: Folded Zucchini Bites!


 For this dish you will need:
  • Zucchini
  • Low Fat cream cheese
  • Tomato Puree
  • Turky Breast
  • Rocket
  • Olive Oil
  • Shalotts
  • Quinoa


 You should also have a ... :
  • Steamer
  • Mandolin
  • Pot


Take half of the zucchini and, using the mandolin, cut it into thin, even slices.


Cut the shallot and sweat it for a moment using a little olive oil. Once the pieces turn glassy, add the Quinoa and water, enough to cover the quinoa twice.




A quick note on Quinoa: 
 If you haven't tried Quinoa yet you should. It's a grain full of good protein. You can use it for everything you use rice for.


Put the zucchini slices into the steamer...



... and put it on top of the Quinoa pot. Use the steam from the cooking water to steam the zucchini.



Cooking Quinoa is basicaly like cooking rise. Wait for the crackeling sound that tells you the water has evaporated. The Quinoa will be done when it has that yellow ring around it like this.


Should it not be done just add a bit more water and cook some more. In case the zucchini is not done yet, put the Quinoa into a bowl, put water in the pot and bring to a boil to continue steaming the zucchini.

While everything is cooking, cut the turkey breast into strips.


Once everything is done, we start the assembling. So, take the steamed zucchini slices ...


... smear a bit of the low fat cream cheese on them ...


... add the turkey ...


... the tomato puree ...


... the rocket, spices and herbs ...


... and finally the Quinoa.


I tried to stick everything on a skewer and put the parmesan on top -  but it didn't work as I planed and fell apart. But you can still try it if you want to. It could look something like this.


But I ended up putting it all onto a plate, grating the Parmesan on top.


Finally I put it under the grill of my microwave to heat it back up and melt the Parmesan.



Add some flaxseed and sesame and voilà. There you go. Folded Zucchini Bites. Ideal to put into the middle of the table for everyone to try with a fork - or just to eat by yourself.
